Some apple and pear hardly gets the chance to establish themselves when a riot of citrus kicks in: lemon, lime and notably grapefruit, bringing in not only a whopping lot of acidity, but also a nice hint of bitterness. A little almond is all that can make it to the finish. This is refreshing with a capital ‘R’.

Those lucky Italians. Blessed with a fine climate, a beautiful landscape and a great cuisine, they only have to look into their back garden to find a grape variety producing a matching wine for almost everything. This is another of those hitherto little known treasures. Pecorino had too low a yield to be interestig in times when quantity prevailed over quality. Now, however, the smart folks at Umani Rochi have taken the initiative to re-vive the grape as one of their local stars. Mille grazie for this.
